Pumpkin Soup

Pumpkin soup 🎃 to cuddle up with on a chilly autumn evening.

2.5 pounds fresh pumpkin or 1 3/4 pumpkin puree 1 medium onion 1 medium carrot 2 celery sticks 2 cloves garlic 2 cups chicken or veggie broth 1 tsp Gram Masala spice mix 1 tsp pumpkin pie mix *cardamom, nutmeg, cinnamon, cloves Sea salt Crushed pepper Dice vegetables and sauté one by one, beginning with onion, in 1/4 cup of chicken broth until all veggies are soft and cooked. Add chicken or veggie broth so that all vegetables are fully submerged. Add garam masala, pumpkin spice mix, and salt and pepper to taste.

*Add some gram masala that includes cardamom, which helps digestion, constipation, and helps the kidneys eliminate waste, and is a natural antidepressant.
