Cauliflower Soup Recipe (Creme du Barry)

This recipe is simple, nutritious, and a favorite dinner party option.

Cauliflower contains Vitamin C, Calcium, and Potassium. It also contains fiber and antioxidants.


Ingredients:

1 Cauliflower (cut into small florets)

3-4 leeks (use only the white part and cut into small pieces)

1 tablespoon of butter (optional)

2 cups of vegetable or chicken broth

Salt and pepper to taste


In a large pot, melt the butter and add the leek and a pinch of salt until the leek pieces are transparent. Add cauliflower florets, until it cooks and gets a bit of color from the butter. Add salt and pepper to taste. Add vegetable or chicken broth until the vegetables are completely submerged. Once the cauliflower is fully cooked, blend all vegetables in a blender or Vitamix. Taste and adjust for salt and pepper if needed.


This recipe is near and dear to my heart because I learned the classic version of it while studying at Le Cordon Bleu un Paris. The original version of this soup contain a bechamel sauce and cream, and although that is classic French cuisine at its best, I’ve adapted the recipe as a healthier version. Receta de Sopa de Coliflor (Creme du Barry)

Esta receta es muy sencilla, nutritiva, y una favorita para ofrecer en una cena.

La coliflor contiene Vitamina C, Calcio, y Potasio. También contiene mucha fibra y antioxidantes.

Ingredientes:

  • 1 Coliflor (cortar en pedazos pequeños)

  • 3-4 puerros (usar solo la parte blanca y cortar en pedazos pequeños)

  • 1 cucharada de mantequilla (opcional)

  • 2 tazas de caldo de verduras o de pollo

  • Sal y pimienta al gusto

En una olla, derretir la mantequilla y agregar el puerro y un poquito de sal hasta que quede transparente. Luego agregar la coliflor, hasta que se cocine y se dore un poco. Agregar un poco de sal y pimienta al gusto. Agregar el caldo de verdura o de pollo hasta que las verduras estén completamente sumergidas. Cuando el coliflor esté cocido, pasar todo por una licuadora. Probar sopa y ajustar la sal y la pimienta si es necesario.
