EGGPLANT PIZZAS

Cooking is a major part of our home schooling curriculum during this quarantine, and I would like to start sharing recipes that I am making with my children on clubyum.com and my Instagram: club_yum. Look for "live" Instagram cooking sessions coming soon!


INGREDIENTS

3 large eggplants (don't peel their nutrient-rich skin)

3 tomatoes

Extra Virgin Olive Oil (enough to cover eggplant slices)

½  cup mozzarella cheese

sea salt

ground pepper

Herbes de Provence

¼ cup fresh basil


Optional additional toppings: Broccoli, red onions, ham, bell peppers, or whatever is in your veggie drawer!

Let the kids smell the herbs before adding a

pinch to the eggplant pizzas



  1. Pre-heat oven to 385 degrees Fahrenheit.

  2. Have kids slice eggplants into 1/2 inch slices.*

  3. Top a baking sheet with olive oil and place eggplant slices on the sheet.

  4. Top with more olive oil (eggplants are like sponges).

  5. Top eggplant slices with sea salt, crushed pepper, herbes de provence, and cheese.

  6. Have kids slice tomatoes, and place sliced tomatoes on eggplant slices.

  7. Bake in the oven for 40 minutes or until the eggplant appears to be roasted and fully softened.

  8. Top with fresh basil.
